Lemon Bars

So Beebs asked for a good lemon bar recipe today. I've tried a bunch of different fancy recipes but this one is the one I always come back to. I think I'd take lemon over chocolate any day. It's pure simpleyummygoodness...

2 cups Flour
1/2 cup confectioners sugar
1 cup (two sticks) butter
4 eggs
2 cups granulated sugar
5 TBS flour
1 tsp baking powder
Pinch of salt
1/4 tsp nutmeg
1/3 cup lemon juice
2 TBS lemon rind

In large bowl combine flour and confectioners sugar.Cut in butter until crumbly and press evenly in 9x13 pan and bake at 350 for 20 minutes.
In small bowl beat eggs and sugar together until light colored.
Stir in flour, baking powder, salt, nutmeg, lemon juice and rind.
While crust is still hot, spread immediately with lemon mixture and continue baking 25-30 minutes or until light golden brown.
Sprinkle with confectioners sugar while still warm.

Pizza

OK, so this isn't really about pizza, well, it is, but it isn't. I just happened to be flipping through the pictures on my camera and came accross these. They are part of "The Great Sleepover at Aunt Angie's of 2010." I thought I'd post them cuz they're cute and they're eating semi-home made pizza. (Store bought crust)

Rachel had the longest string of cheese EVER! I thought we were going to have to get some scissors...

Hannah was like this ALL NIGHT...the girl is nuts!

Tomato Salad...mmmmmm....



So here's the first one. I had some friends over a couple of Sundays ago for dinner after church. I found this on http://www.bhg.com/ , one of my trusty stand-by's for easy/yummy/goodness, and they couldn't get enough of it.





Ingredients
1 medium red onion, sliced 1/4-inch thick
1/2 cup cider vinegar
1/4 cup sugar
8 cups tomatoes, cut (about 3 lb.)
Directions
1. In medium bowl combine 4 cups ice cold water and 2 teaspoons salt; stir to dissolve salt. Add onion slices; stir to separate rings. Let stand 20 minutes; drain.

2. Meanwhile, for Sweet-Sour Dressing, in small bowl whisk together vinegar, sugar, and 3/4 teaspoon each salt and freshly ground black pepper. In extra-large bowl combine tomatoes and drained onions. Add dressing; gently toss to coat. Let stand 5 minutes. Serves 6 to 8.

It looks like they may have added some basil leaves for a bit of garnish. I actually added some mozzarella balls and it was D. LISH. US!

In The Beginning

So I've been thinking about this for some time and I finally decided to put thought into action. I know...who knew I could actually do that? I love to cook and I love to entertain. My favorite thing to do is throw a dinner party. It's my way of showing my friends and family I love them. I think I got it from Nanny Eldredge...anyway...the point of this little blog is to share, with whoever out there cares, fabulous recipes I come across and dinner parties I throw.

I know there are a million other blogs out there doing the same thing but I remember finding a "Dinner Party Journal" if you will, in all of Nanny's things after she died and she listed who came, what she served and other little tid bits about the evening. This is my "Dinner Party Journal" so enjoy!

Oh and the background? I chose it because it had a table and chairs under the "canopy" of pomander balls but it's not showing up. If anyone knows how to fix that...let me know...thanks.
